1. “True” Ceylon cinnamon (Cinnamomum zeylanicum) is native to Sri Lanka and southern India.
2. The more common variety, Cassia cinnamon (Cinnamomum aromaticum), is known as “Chinese” cinnamon.

While Cassia cinnamon can contain undesirable levels of a chemical called coumarin, a powerful anticoagulant with potential carcinogenic and toxic properties, Ceylon cinnamon has been shown to contain almost undetectable levels of coumarin – making it a much safer option.
